Nicolas Alziari: Over 150 years of Savoir-Faire
The story of the Maison Alziari dates back to 1868, when Nicolas Alziari’s father-in-law, César Martin, purchased an olive oil mill in the Madeleine quarter of Nice. By1900, Nicolas and his wife Jeanne had taken over, and began creating never-before-tasted varieties of olive oil, using processing techniques developed for wine, coffeeand chocolate. He incorporated the use of different varieties of olive, as only one was grown in the Nice region at the time. Though the family sold themill in 1991,it came
back into the hands of the sons
of Nicolas’s great-granddaughter’s brother-in-law in 2019, to continue growing the family business.
